Common Sage / Garden Sage (Salvia officinalis) is the classic culinary sage, forming a woody, semi-evergreen shrub 18–30 inches tall and wide with a dense, rounded to spreading habit. Its velvety, pebbled, gray-green leaves release a warm, camphor-like aroma and deliver the robust, earthy flavor essential for poultry stuffing, pork, duck, homemade sausage, bean dishes, omelettes, and cheese.

 

A hardy perennial (zones 4–8 with protection, reliably 5–9), it thrives in full sun and lean, well-drained soil, tolerating drought once established. In spring it produces spikes of soft lavender-blue flowers beloved by bees.

 

Sage tea or gargle soothes sore throats and reduces excessive perspiration and saliva. Traditionally used for digestive complaints (gas, bloating, heartburn) and menopausal symptoms, modern studies also suggest benefits for memory, mood, blood-sugar regulation, and possible support in Alzheimer’s management thanks to its potent antioxidant and anti-inflammatory compounds.
