Italian Flat-Leaf Parsley (Petroselinum crispum var. neapolitanum), often simply called flat-leaf parsley, features bright green, tender stems when young (toughening with age) topped with broad, triangular, deeply toothed leaves divided into three sections. Compared to curled varieties, it is hardier, more vigorous, and offers a stronger, richer, less bitter flavor with pronounced grassy-peppery notes. This is the preferred parsley of professional kitchens for soups, sauces, pesto, chimichurri, and anywhere bold herb flavor is wanted.
