Considered is a superfood - kale is packed with protein, calcium, iron, vitamin A, fiber, and anti-cancer properties. And it has more vitamin C than any other leafy green. Elongated, flat, bluish-green leaves have a crinkled texture. It’s also called Tuscan or dinosaur kale, however, Lacinato is a specific Italian heirloom variety.
Kale is one of the few leafy greens that doesn’t shrink much when you cook it, and it’s great sautéed, baked, roasted, and stewed. Or my preferred delivery method: in smoothies.
