(Brassica oleracea var. sabellica) Lacinato kale, also known as Tuscan or Dinosaur, is a striking Italian heirloom with long, narrow, deeply blistered leaves the color of midnight blue-green. Tougher and more savory than curly kales, its pebbled, strap-like foliage sweetens beautifully after frost and holds its texture when cooked. This is a popular variety for making soups and kale chips.
