Green Zebra is a stunning 2–4 oz saladette tomato that ripens to a vibrant emerald green overlaid with jagged golden-yellow stripes, turning slightly amber when fully ripe. Bred for beauty and flavor, it offers crisp, juicy flesh with a bright, zesty tang and refreshing citrus-like acidity balanced by subtle sweetness—often described as having a “sparkling” or “electric” taste that wakes up the palate. The medium-sized fruits grow on vigorous, indeterminate regular-leaf plants that produce heavily from mid-season onward (about 75–80 days from transplant). A favorite of chefs and market growers, Green Zebra is equally prized for fresh eating, salads, salsas, and garnishes where its vivid color and lively flavor steal the show.
As with all GWR (Green When Ripe) fruits, it is best to pick fruits by feel, rather than by sight.
HISTORY: Created in the early 1980s by tomato breeder Tom Wagner of Everett, Washington, founder of Tater Mater Seed (originally New World Seeds & Tubers). Wagner crossed four heirloom varieties—Evergreen, Everett’s Rusty Red, an unidentified striped tomato, and a green-when-ripe selection—to achieve stable stripes on a green background with superior taste. He introduced Green Zebra commercially around 1983 through his catalog and later shared seed with Seed Savers Exchange.
