'Florence' fennel (Foeniculum vulgare var. azoricum) forms striking 3–4 foot stalks of soft, feathery, bright-green foliage that resembles dill on a grand scale. At the base, crisp, glossy white bulbs swell above the soil - layered and juicy - with a refreshing sweet-anise crunch.

 

Harvest the bulbs young for shaving raw into salads or roast them until golden and caramelized; the lush, aromatic tops serve as both herb and garnish.
