Beit Alpha (a.k.a. Persian Baby) is the original open-pollinated variety that launched the whole “Persian” cucumber craze. Developed in the 1930s, Beit Alpha is the one most people grab straight off the vine and eat like an apple. These slender, 5- to 7-inch beauties have the thinnest, most tender skin of all that we offer--never a trace of bitterness--and a small seed cavity that stays crisp and sweet even in scorching heat. It’s the cucumber you find in grocery stores labeled “Persian” or “mini,” and it’s ridiculously productive on a trellis.

KEY CHARACTERISTICS

  • Fruit: 5–7 inches long, slender, medium-dark green, very thin and tender skin (never bitter, never needs peeling).
  • Flesh: Crisp, juicy, almost seedless when harvested young, very small and soft seed cavity even when slightly mature. Sweet, refreshing, no burps.
  • Days to maturity: Super early – 50–55 days from transplant, 55–60 from direct seed.
  • Plant habit: Vigorous vines but not overly wild; excellent on a trellis or fence. Mostly female (gynoecious-leaning) so very heavy yielding.
  • Heat tolerance: Outstanding – keeps producing perfectly straight, non-bitter fruits even when summer temperatures soar past 100 °F.
  • Disease resistance: Good field resistance to powdery mildew, downy mildew, and viruses, though not quite at the hybrid level of Diva.
  • Best uses: Hands-down the #1 favorite for fresh eating straight off the vine, salads & tzatziki. Fruits stay crisp when pickled.
