Chives (Allium schoenoprasum) are the easiest, most forgiving perennial onion you can grow. Forming tidy, grass-like clumps 12–18 inches tall, they deliver slender, tubular, hollow leaves with a clean, mild onion flavor that adds gentle bite to eggs, potatoes, salads, dips, and soups without overpowering other ingredients. The leaves snip cleanly, regrow quickly, and hold their flavor whether used fresh, frozen, or dried.
In late spring, round lavender-pink pom-pom flowers rise above the foliage on stiff stalks—fully edible, beautiful in salads, and a magnet for bees. Extremely cold-hardy (zones 3–9), clumps return reliably year after year, spreading slowly by seed and rhizomes. Plant in full sun to part shade in any decent garden soil; a single division will feed a household for decades with almost zero effort.
