A legendary Polish-American paste tomato that ranks among the very best sauce varieties ever brought to North America.
Huge, banana-shaped red fruits average 6–10 inches long and 8–16 oz each, with thick, meaty walls, almost no seeds, and very low water content. They cook down lightning-fast into an ultra-thick, rich, sweet sauce with classic old-world depth — many growers call it the finest tasting paste tomato they’ve ever grown. Vigorous regular-leaf indeterminate vines reach 6–8 ft, produce heavy clusters later in the season (showing up out of nowhere), and show excellent disease resistance and crack tolerance.
HISTORY: Brought to the U.S. by Polish immigrants settling in the New York–New Jersey area in the early 1900s (exact date unknown). The variety was preserved for generations in Polish-American family gardens around Buffalo, NY and central New Jersey, where it was simply called “the big Polish sausage tomato” because of its shape.
First listed commercially in the 1980s by Gleckler Seedmen and Southern Exposure Seed Exchange after seed saver Carolyn Male received it from a Polish family in upstate New York. It quickly became a cult favorite among heirloom collectors and is now considered one of the top three or four paste tomatoes in existence (regularly beating San Marzano and Opalka in blind taste tests).
