Perfectly round, smooth, blemish-free bright red fruits average 8–14 oz with dense, meaty flesh and a bold, bright, old-world acidic bite (much more tart than sweet). Flavor is the quintessential “real tomato” taste that makes unforgettable sauce, pasta, and fresh slices. Vigorous regular-leaf indeterminate vines are true workhorses—extremely productive, early for a big beefsteak, and just 2–3 plants will bury you in sauce tomatoes.
HISTORY: Discovered and introduced by Australian grower “Skip” after he met an elderly Italian lady named Palmira at a local trash-and-treasure market. She pressed a handful of seeds into his hand, saying only that they were a traditional large red beefsteak from northern Italy. Skip grew them out, fell in love with the classic acidic punch (comparing it to the equally tart Ray’s Greek), and named the variety in her honor. A charming, direct-from-the-source heirloom.
