Garlic chives (Allium tuberosum), also known as Chinese chives, bring a gentle, savory garlic-onion flavor that’s stronger than regular chives but far milder than bulb garlic. The flat, strap-like leaves are thick, hollow, and perfect for snipping fresh into stir-fries, dumplings, soups, egg dishes, or herb butters; they also freeze or dry well while retaining good flavor.

 

A hardy perennial (zones 3–9), garlic chives form neat, slowly spreading clumps that are much less aggressive than common chives and rarely self-seed invasively. In late summer to early fall, plants send up tall stalks topped with star-shaped white flower clusters that are fully edible and loved by pollinators.

 

Like other alliums, garlic chives contain beneficial bioflavonoids and sulfur compounds with strong antioxidant properties that research links to reduced risk of certain cancers and improved cardiovascular health. Easy, long-lived, and delicious year after year.
