Calabrian chile peppers are tapered, with a square stem end and blunt pointed tip. They mature to a bright, glossy. The peppers develop the best flavor and most smoky-fruity overtones when left to age on the vine and picked when they start to show a slightly wrinkled exterior.
Crisp flesh with a little spice but no real heat. Marvelous in cooking, fresh, roasted or dried. These are very nice stuffed with a mild goat cheese and grilled on the BBQ, There’s a reason the Calabrian’s call this their caviar.
